Rice and beans
- Heat a deep skillet over medium-high heat. Saute the onions, garlic and peppers until lightly browned.
- Add the vegetable broth, reduce the heat, cover and cook for 5 minutes.
- Add the beans and rice, then pour in all the liquids and spices. Add the whole pepper on top — do not cut it.
- Bring to a boil, reduce to a simmer and cook for 15 minutes.
- Turn off the heat and leave covered for 15 minutes more.
- Remove the whole pepper and serve.
Pikliz
- Mix all the vegetables together in a large bowl.
- Pack into jars and cover completely with the vinegar and lime juice.
- Marinate for a minimum of 2 days before eating. Keeps in the refrigerator up to 3 months as long as everything stays submerged.

Notes
Leave the Scotch bonnet whole. It perfumes the pot without making it hot — if it bursts, it will be very hot indeed. Make the pikliz at least two days ahead.
